High Protein Chocolate Chip Cookies (The Kids’ll Never Know)

Just the other day I made some high protein chocolate chip cookies, and snuck in some Berry Radical antioxidant powder, in an attempt to make the kids (and the hubby) just a smidge healthier.

High Protein Chocolate Chip Cookies: Vegan Oatmeal Version

  • 4 scoops Miessence complete protein powder (raw, vegan, complete amino acid profile, no added sugar or artificial sweetener)
  • 4 tsp Berry Radical antioxidant superfood powder
  • 1/2 cup maple syrup or agave nectar
  • 1/2 cup almond butter
  • 1/4 cup water
  • 1 tbs vanilla extract
  • 1 tbs ground flax + 3 tbs water (mix first and let stand before adding to the rest of the ingredients)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 cup LSA mix
  • 3 cups oats
  • 1/2 cup chocolate chips
  • 1/4 cup ground flax seed

METHOD

  • Preheat over to 375 F​
  • In a large bowl, mix together maple syrup (or agave), almond butter, vanilla, egg, protein powder, antioxidants, baking soda, salt, cinnamon, and LSA mix.
  • Add oats, chocolate chips, and flax seeds.
  • Drop onto greased cookie sheet in 1/4 tbs scoops.
  • Bake 10-12 minutes or until golden brown.

High Protein Chocolate Chip Cookies: Super Simple, Kid Friendly, Still Vegan

These are my "kid friendly" high protein chocolate chip cookies because they don't have any chunks (i.e. oats) in them.  

My kids are sort of weird about texture and like their chocolate chip cookies to be just cookie + chocolate chips, no "stuff".  (I can hear it now: "Mommy!  Mommy!  Take the stuff out of my cookie!")

These were a big hit.​

METHOD

  • Preheat over to 375 F​
  • In a large bowl, mix together sugar, vanilla, and oil.
  • Add soy/almond milk, dry ingredients, and chocolate chips.  Mix well.
  • Drop onto greased cookie sheet in 1/4 tbs scoops.
  • Bake 9-15 minutes (depending on oven strength) or until golden brown.
