Simple, Healthy Vegan Recipes: Quinoa Salad

I love simple, healthy vegan recipes that I can throw together in 10 minutes.  This quinoa salad is simple, healthy, and full of vegetables and protein.  This is definitely going into my permanent lunch rotation.

Ingredients and Directions

This is seriously one of the easiest vegan dishes you will ever make.  And it’s delicious!

  • 1 can of black beans, rinsed
  • 1 can of corn
  • 2 peppers (I used 1 green and 1 red), chopped into small pieces
  • 1 box of quinoa
  • balsamic vinaigrette or olive oil + vinegar + salt and pepper, to taste

How to Make It

Boil water to cook the quinoa.  Once the water is boiling, dump in all your quinoa and turn down the heat on the stove.  Simmer until your quinoa has turned somewhat translucent and you see little white curly spirals in it.

Mix cooked (and drained) quinoa with veggies, beans, and dressing.
